Description

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce (your choice)
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley (optional)

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a pan, cook the chicken until browned on both sides.
  3. Remove the chicken and set aside.
  4. In the same pan, add the rice, chicken broth, BBQ sauce, and honey. Stir well.
  5. Place the chicken back on top of the rice mixture.
  6. Cover and simmer for 15-20 minutes or until the rice is cooked.
  7. Add the mixed vegetables and cook for an additional 5 minutes.
  8. Garnish with chopped green onions or parsley if desired.
