Description
A simple and flavorful one-pot meal featuring tender chicken cooked in a sweet and smoky honey BBQ sauce, served with rice and mixed vegetables.

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce (your choice)
- 1/4 cup honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup mixed vegetables (frozen or fresh)
- Chopped green onions or parsley (optional)
Instructions
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- In a pan, cook the chicken until browned on both sides.
- Remove the chicken and set aside.
- In the same pan, add the rice, chicken broth, BBQ sauce, and honey. Stir well.
- Place the chicken back on top of the rice mixture.
- Cover and simmer for 15-20 minutes or until the rice is cooked.
- Add the mixed vegetables and cook for an additional 5 minutes.
- Garnish with chopped green onions or parsley if desired.
Notes
- Use your favorite BBQ sauce for the best flavor.
- Adjust honey quantity based on your sweetness preference.
- Fresh or frozen vegetables work equally well.
