Description

A flavorful dish featuring tender chicken pieces coated in a sweet and smoky honey BBQ sauce, served over fluffy rice.


Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and freshly ground black pepper to taste
  • 1 cup Honey BBQ Sauce (store-bought or homemade)
  • 1 cup ketchup
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • Pinch of cayenne pepper (optional)
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 tablespoon butter or olive oil
  • 1/2 teaspoon salt

Instructions

  1. Prepare the honey BBQ sauce by mixing ketchup, honey, apple cider vinegar, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, chili powder, and cayenne pepper in a bowl. Set aside.
  2. Season chicken pieces with smoked paprika, garlic powder, onion powder, chili powder, cayenne pepper, salt, and black pepper.
  3. Heat olive oil in a pan over medium heat. Add chicken and cook until browned and fully cooked, about 6-8 minutes.
  4. Pour the honey BBQ sauce over the cooked chicken. Stir to coat evenly and simmer for 2-3 minutes.
  5. Rinse rice under cold water until the water runs clear. Drain well.
  6. In a pot, heat butter or olive oil over medium heat. Add rice and stir for 1 minute.
  7. Pour in chicken broth and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
  8. Fluff rice with a fork and serve topped with honey BBQ chicken.

Notes

  • Adjust cayenne pepper to control spiciness.
  • Use store-bought honey BBQ sauce for a quicker option.
  • Leftovers can be stored in the fridge for up to 3 days.
