One Pot Creamy Tuscan Garlic Spaghetti

Description

A creamy and flavorful spaghetti dish made in one pot.


Ingredients

  • 12 oz spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and red pepper flakes. Sauté for 1 minute.
  3. Add cherry tomatoes and sun-dried tomatoes. Cook for 3-4 minutes until softened.
  4. Add spaghetti and pour in enough water to cover the pasta. Bring to a boil.
  5. Reduce heat and simmer, stirring occasionally, for about 10-12 minutes until spaghetti is cooked.
  6. Stir in baby spinach, heavy cream, Parmesan cheese, salt, and black pepper. Mix well.
  7. Cook for 2-3 minutes until heated through and creamy.
  8. Remove from heat and stir in fresh basil before serving.

Notes

  • Adjust the spice level by adding more or less red pepper flakes.
  • For a lighter version, substitute heavy cream with half-and-half.
