- 1/2 cup Granulated Sugar (or sugar alternative)
- 1 Large Egg (or flax egg for vegan)
- 1 teaspoon Vanilla Extract (pure recommended)
- 1/4 cup Molasses (or agave syrup)
- 1 1/2 cups All-Purpose Flour (or gluten-free blend)
- 2 cups Old-Fashioned Oats (do not use quick oats)
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Ground Cinnamon (optional)
- 1/4 teaspoon Salt (or sea salt)
- 1/2 cup Freeze-Dried Strawberries (no fresh strawberries for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together butter and sugars until smooth.
- Add the egg and vanilla, mixing well.
- Stir in molasses.
- In another bowl, combine flour, oats, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture.
- Drop dough by spoonfuls onto a baking sheet.
- Bake for 10-12 minutes or until golden.
- Allow cookies to cool on a wire rack.
- Prepare the glaze by crushing freeze-dried strawberries and mixing with a little water until smooth.
- Drizzle glaze over cooled cookies.
