Description

Strawberry Lemonade Cookies are a refreshing treat that combines the sweetness of strawberries with the tanginess of lemon.


Ingredients

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until smooth.
  4. Add the egg, vanilla extract, lemon zest, and lemon juice to the mixture and blend well.
  5. Gradually add the dry ingredients to the wet ingredients until combined.
  6. Fold in the chopped strawberries.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let the cookies cool on a wire rack.
