Description
Strawberry Pop Tart Sugar Cookies are sweet, soft cookies filled with strawberry jam and topped with colorful sprinkles.

- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1 cup Unsalted Butter
- 1 cup Granulated Sugar
- 1 cup Powdered Sugar
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Almond Extract
- 1 cup Strawberry Jam or Preserves
- 1 cup Sprinkles
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, baking powder, and salt.
- In another bowl, cream together butter, granulated sugar, and powdered sugar.
- Add eggs, vanilla extract, and almond extract to the butter mixture and mix well.
- Gradually stir in the dry ingredients until well combined.
- Chill the dough in the refrigerator for 30 minutes.
- Roll out dough and cut into shapes.
- Add a teaspoon of strawberry jam on half of the shapes.
- Cover with remaining dough shapes and seal edges.
- Sprinkle with colored sprinkles.
- Bake for 10-12 minutes or until lightly golden.
- Let cool before serving.

- Use a gluten-free flour blend for gluten-free options.
- Flaxseed meal can replace eggs for a vegan version.
