- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 3/4 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/3 cup whole milk
- 1 cup sweet potatoes, cooked and mashed
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix sugars and oil until smooth.
- Add eggs one at a time, mixing well after each.
- In another bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
- Alternately add dry ingredients and milk to the sugar mixture, starting and ending with dry ingredients.
- Fold in mashed sweet potatoes until just combined.
- Pour batter into the prepared pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- Use freshly mashed sweet potatoes for best texture.
- Store leftovers in an airtight container for up to 3 days.
- For extra richness, add 1/2 cup chopped nuts.
