Description

A moist and flavorful bread made with mashed sweet potatoes, warm spices, and a hint of sweetness.


Ingredients

  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup whole milk
  • 1 cup sweet potatoes, cooked and mashed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix sugars and oil until smooth.
  3. Add eggs one at a time, mixing well after each.
  4. In another bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
  5. Alternately add dry ingredients and milk to the sugar mixture, starting and ending with dry ingredients.
  6. Fold in mashed sweet potatoes until just combined.
  7. Pour batter into the prepared pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use freshly mashed sweet potatoes for best texture.
  • Store leftovers in an airtight container for up to 3 days.
  • For extra richness, add 1/2 cup chopped nuts.
