Delicious white vanilla cupcakes perfect for any occasion.


Ingredients

  • 2 ¾ cups (275 g) cake flour
  • 2 teaspoons baking powder
  • ¾ teaspoon kosher salt
  • 1 cup (2 sticks / 227 g) unsalted butter, room temperature
  • 2 ½ cups (500 g) granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 5 large egg whites
  • 1 cup (225 g) milk, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix cake flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add vanilla and almond extracts, then mix well.
  5. Add egg whites gradually, mixing thoroughly after each addition.
  6. Alternate adding flour mixture and milk, starting and ending with flour.
  7. Pour the batter into cupcake liners, filling them 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before frosting.
