Ingredients

- 2 ¾ cups (275 g) cake flour
- 2 teaspoons baking powder
- ¾ teaspoon kosher salt
- 1 cup (2 sticks / 227 g) unsalted butter, room temperature
- 2 ½ cups (500 g) granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 5 large egg whites
- 1 cup (225 g) milk, room temperature
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix cake flour, baking powder, and salt.
- In another bowl, beat butter and sugar until light and fluffy.
- Add vanilla and almond extracts, then mix well.
- Add egg whites gradually, mixing thoroughly after each addition.
- Alternate adding flour mixture and milk, starting and ending with flour.
- Pour the batter into cupcake liners, filling them 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before frosting.
