Ingredients
  

  • 2 large sweet onions finely chopped
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup milk
  • Oil for frying vegetable or canola

Instructions
 

  • In a bowl, mix flour, sugar, baking powder, salt, and pepper.
  • Stir in onions and milk until a thick batter forms.
  • Heat ½ inch of oil in a skillet over medium heat (about 350°F).
  • Drop heaping tablespoons of batter into the oil and slightly flatten.
  • Fry 2–3 minutes per side, until golden brown and crisp.
  • Drain on paper towels and serve hot.

Notes

  • Add green onions, jalapeños, or shredded cheese for variety.
  • To reheat, use an oven or air fryer to restore crispness.
  • Bake instead of fry at 425°F for a lighter version.
