This golden Dandelion Candy is a sweet, floral treat made from foraged dandelion petals, perfect for springtime gifting or nostalgic snacking.

- 2 cups fresh dandelion petals yellow parts only
- 2 cups water
- 2 cups granulated sugar
- 2 tablespoons lemon juice
Harvest about 4-5 cups of whole dandelion flowers.
Pinch off yellow petals and discard green parts.
Combine petals and water in a saucepan; bring to boil and simmer 10 minutes.
Strain through cheesecloth or fine sieve; press out all liquid.
Return dandelion liquid to pot, add sugar and lemon juice.
Boil until syrup reaches 300°F (hard crack stage) on a candy thermometer.
Pour hot syrup into candy molds or onto parchment. Let cool completely.
Break into pieces if poured on a sheet.
Store in an airtight container in a cool, dry place.
