Ingredients
  

  • 1 package 6 oz lime Jello
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup cottage cheese small-curd, full-fat or low-fat
  • 1 can 8 oz crushed pineapple, drained
  • ½ cup Cool Whip optional, for extra creaminess
  • ¼ cup chopped walnuts optional, for crunch

Instructions
 

  • Step 1: Dissolve the Jello
  • In a large mixing bowl, pour the lime Jello powder.
  • Add 2 cups of boiling water and stir until completely dissolved (about 2 minutes).
  • Step 2: Cool and Add Cold Water
  • Stir in 1 cup of cold water.
  • Let the mixture sit at room temperature for about 10-15 minutes to cool slightly before adding other ingredients.
  • Step 3: Mix in the Good Stuff
  • Gently fold in the cottage cheese and drained crushed pineapple.
  • If using, add the Cool Whip for extra fluffiness.
  • Stir in chopped walnuts if desired, reserving a few for garnish.
  • Step 4: Chill and Set
  • Pour the mixture into a serving bowl or individual cups.
  • Cover and refrigerate for at least 4 hours, or until fully set.
  • Before serving, garnish with extra walnuts or a dollop of Cool Whip if you like.
