- ½ cup unsalted butter melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup brewed espresso or strong coffee cooled
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ½ cup chocolate chips
- ¼ cup chopped walnuts or pecans optional
- Optional: ¼ teaspoon cinnamon pinch of chili powder, flaky sea salt for topping
Preheat oven to 350°F and grease or line a mini muffin tin.
Whisk melted butter and sugar until glossy. Add eggs, vanilla, and espresso.
Stir in cocoa, flour, and salt until just combined.
Fold in chocolate chips and nuts.
Fill muffin cups ¾ full and bake 12–15 minutes.
Cool 5 minutes in pan, then transfer to wire rack.
