Ingredients
  

  • 4 boneless skinless chicken breasts (cooked and shredded)
  • Salt and pepper to taste
  • 1 sleeve Ritz crackers crushed
  • ½ cup grated Parmesan cheese
  • ½ cup unsalted butter melted
  • 1 cup sour cream
  • 1 can 10.5 oz cream of chicken soup
  • ½ cup chicken broth
  • 1 tablespoon fresh parsley chopped (optional)
  • Optional: ½ cup frozen peas corn, or diced carrots
  • Optional: 1 teaspoon garlic powder or onion powder

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Season chicken with salt and pepper, then cook and shred.
  • In a bowl, combine sour cream, cream of chicken soup, and chicken broth.
  • Stir in shredded chicken and any optional vegetables or seasonings.
  • Spread mixture into prepared baking dish.
  • In a separate bowl, mix crushed Ritz crackers, Parmesan cheese, and melted butter.
  • Sprinkle cracker topping evenly over the casserole.
  • Bake uncovered for 30–35 minutes, until golden and bubbly.
  • Let rest for 5–10 minutes. Garnish with parsley and serve.

  • Use rotisserie chicken for faster prep.
  • Swap in cream of mushroom or celery soup for variation.
  • Add frozen veggies for extra nutrition.
  • Store leftovers in the fridge up to 4 days, or freeze up to 2 months.
